Baked Tortellini
I made this last night and it was good- we both really liked it and it was really easy to make. the picture is not really good...sorry :)
19 oz tortellini (that was the size that was on sale, and I used a 5 cheese tortellini, but I bet it's really good with other types too)
1 tbs oil- or butter, whichever you prefer to cook with
2 chicken breasts cut into bite size pieces
3 green onions finely chopped
2 tbs flour
1 cup chicken broth
8 oz sliced fresh mushrooms
3/4 cup sour cream (I used reduced fat and it tasted good)
2 cups shredded cheese (I used colby jack)
Boil the tortellini for a few minutes. (It cooks while you bake it, so just get it started). Drain and set aside.
Heat the oil in a large nonstick skillet, and cook chicken for a few minutes. Then add the mushrooms and green onions till chicken is cooked through and the veggies are softened. Sprinkle the flour over chicken and stir. Add the chicken broth, and stir till thickened. Then stir in the sour cream, and let sit till it is warm
Spray 13 by 9 inch pan with cooking spray. Add the tortellini, some cheese, the chicken mixture, and then the rest of the cheese.
Cover with foil and bake for 30 minutes at 350, then uncover and bake for 15 minutes till bubbly.

This recipe serves about four people, but you can double the recipe it would still fit into the pan.
***Next time I make this Chris and I thought it would be good to add artichoke hearts and top it with bacon...now that sounds delicious!
